The OSCAR - October Collab w/ Star Chef Oscar de Matos
The best smash burger in Zurich is working together with the best chefs. Our newest collaboration is with 16 Gault&Millau Points and 1 Star Michelin Chef Oscar De Matos.
Oscar and I wanted to create something special that still remains a real burger. Oscar had a genius idea of blending his XO-sauce into a mayo. The XO-sauce is a reduction of luxurious ingredients like dried scallops, dried shrimps, lobster bisque and shallots. The result is a true umami bomb. Other extras include his signature Yucàtan fermented onions that give a nice sweet and acidic kick. All we did was to add shredded lettuce and homemade thinly sliced pickles for a nice balance.
We love this burger and this collab because we really managed to achieve what we set out to. And our customers have been loving the burger too.
